A flavorful and colorful rice dish with cranberries and oranges.
Ingredients

- 1 cup long-grain rice
- 2 cups vegetable broth
- 1/2 cup dried cranberries
- 1/2 cup orange juice
- 1 small onion, chopped
- 2 tablespoons olive oil
- 1/4 cup chopped fresh parsley
- Salt to taste
Instructions
- Rinse the rice under cold water.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and sauté until softened.
- Add rice and stir for 2-3 minutes.
- Pour in vegetable broth and orange juice.
- Add dried cranberries and salt.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 18-20 minutes until rice is cooked.
- Fluff with a fork and stir in parsley before serving.
Notes
- Use fresh orange zest for added flavor.
- Can substitute brown rice for a healthier option.
