Description

Ingredients

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1/2 cup dried cranberries
  • 1/2 cup orange juice
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley
  • Salt to taste

Instructions

  1. Rinse the rice under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add chopped onion and sauté until softened.
  4. Add rice and stir for 2-3 minutes.
  5. Pour in vegetable broth and orange juice.
  6. Add dried cranberries and salt.
  7. Bring to a boil, then reduce heat to low.
  8. Cover and simmer for 18-20 minutes until rice is cooked.
  9. Fluff with a fork and stir in parsley before serving.

Notes

  • Use fresh orange zest for added flavor.
