Description

A refreshing salad that combines sweet corn, crisp vegetables, and a zesty dressing, perfect for summer gatherings.

Ingredients

Scale
  • 2 cups frozen corn, thawed
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup red onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. Prepare the corn by thawing frozen corn or briefly cooking fresh corn, then cooling it.
  2. In a large mixing bowl, combine corn, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. Whisk together mayonnaise, sour cream, lime juice, garlic powder, chili powder, salt, and pepper in a separate bowl.
  4. Pour the dressing over the salad mixture and toss until evenly coated.
  5. Chill the salad for at least 30 minutes before serving.

Notes

For alternative flavor profiles, consider swapping feta with goat cheese, using Greek yogurt instead of mayonnaise, and adding diced avocado for creaminess.
