Description

The Chopped Italian Grinder Salad is a delightful and colorful dish that combines fresh ingredients and bold flavors, inspired by the classic Italian grinder sandwich. It’s a lighter, healthier option perfect for any meal.

Ingredients

Scale
  • 4 cups mixed greens (romaine, arugula, or spinach)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1 cup Kalamata olives (pitted and sliced)
  • 1 bell pepper (diced)
  • 6 ounces thinly sliced salami (cut into strips)
  • 1/2 red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 cup Italian vinaigrette dressing
  • Salt and pepper (to taste)

Instructions

  1. Rinse the mixed greens under cold water and dry thoroughly.
  2. Chop the greens into bite-sized pieces and place them in a large bowl.
  3. Cut the salami into strips and grate the Parmesan cheese if using.
  4. If making homemade dressing, mix olive oil, vinegar, Italian herbs, salt, and pepper in a small bowl.
  5. In the bowl with the greens, add cherry tomatoes, cucumber, olives, bell pepper, salami, and red onion.
  6. Sprinkle parsley over the top and drizzle with vinaigrette dressing.
  7. Toss gently to combine, adding more dressing if needed, and season with salt and pepper.
  8. If using, sprinkle Parmesan cheese on top before serving.

Notes

  • Use fresh, high-quality ingredients for the best flavor.
  • Store leftovers in an airtight container; consume within a day if dressed.
  • For a vegetarian version, substitute salami with marinated artichoke hearts or chickpeas.
  • Grains like quinoa or farro can be added for extra texture.
