Delicious chocolate stuffed pancakes that are vegan and gluten free.
Ingredients

- 1 cup gluten free flour
- 1 tablespoon cocoa powder
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup almond milk
- 1 tablespoon vegetable oil
- 1/2 cup dairy-free chocolate chips
Instructions
- In a bowl, mix the gluten free flour, cocoa powder, sugar, baking powder, and salt.
- Add almond milk and vegetable oil. Stir until smooth.
- Heat a non-stick skillet over medium heat.
- Pour 1/4 cup of batter onto the skillet.
- Add a few chocolate chips on top of the pancake.
- Cook until bubbles form on the surface, then flip and cook for another 2 minutes.
- Repeat with remaining batter.
Notes
- Store leftovers in the fridge for up to 3 days.
- Reheat in a toaster or skillet.
- Adjust sweetness to your preference.
