Description

Delicious chocolate stuffed pancakes that are vegan and gluten free.


Ingredients

  • 1 cup gluten free flour
  • 1 tablespoon cocoa powder
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup almond milk
  • 1 tablespoon vegetable oil
  • 1/2 cup dairy-free chocolate chips

Instructions

  1. In a bowl, mix the gluten free flour, cocoa powder, sugar, baking powder, and salt.
  2. Add almond milk and vegetable oil. Stir until smooth.
  3. Heat a non-stick skillet over medium heat.
  4. Pour 1/4 cup of batter onto the skillet.
  5. Add a few chocolate chips on top of the pancake.
  6. Cook until bubbles form on the surface, then flip and cook for another 2 minutes.
  7. Repeat with remaining batter.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • Reheat in a toaster or skillet.
  • Adjust sweetness to your preference.
