Description

A delicious and moist Chocolate Chip Zucchini Bread that combines the sweetness of chocolate with the subtle earthiness of zucchini, perfect for breakfast, snacks, or dessert.

Ingredients

Scale
  • 1 medium zucchini (about 200 grams), grated
  • 1 cup (200 grams) granulated sugar
  • 1/2 cup (100 grams) brown sugar, packed
  • 1/2 cup (120 ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190 grams) all-purpose flour
  • 1/2 cup (45 grams) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (175 grams) semi-sweet chocolate chips
  • Optional: 1/2 teaspoon ground cinnamon for added flavor

Instructions

  1. Prepare the zucchini by washing and grating it, then squeeze out excess moisture if necessary.
  2. Mix the dry ingredients: whisk together flour, cocoa powder, baking soda, baking powder, salt, and cinnamon in a separate bowl.
  3. Combine the wet ingredients: in a large bowl, mix granulated sugar, brown sugar, and vegetable oil, then add eggs and vanilla extract.
  4. Merge the wet and dry ingredients, stirring gently until just combined.
  5. Add the grated zucchini and chocolate chips, folding them into the batter.
  6. Pour the batter into a prepared loaf pan and bake in a preheated oven for 50-60 minutes, checking for doneness with a toothpick.

Notes

  • Choose medium-sized zucchinis for better sweetness and texture.
  • Adjust sweetness levels according to personal preference.
  • For gluten-free, use a gluten-free flour blend and add xanthan gum.
  • For vegan, substitute eggs with applesauce or flaxseed mixture and use plant-based oil.
