- 1 tbsp corn starch
- 1 tsp salt
- 1/2 cup unsalted butter, softened
- 2 ripe bananas, peeled
- 1 cup brown sugar
- 1/4 cup granulated sugar
- 2 tsp vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Whisk together the flour, baking soda, corn starch, and salt in a medium bowl.
- Cream the softened butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy.
- Add the mashed bananas and vanilla extract and beat until combined.
- Gradually add the dry mixture to the wet ingredients and stir until just combined. Fold in the chocolate chips.
- Refrigerate the dough for about 30 minutes.
- Preheat the oven to 375°F (190°C) and prepare baking sheets.
- Scoop dough onto prepared sheets, leaving space for spreading.
- Bake for 9-10 minutes until light golden brown. Cool before serving.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free blend. For vegan cookies, use a plant-based butter alternative.
