Description

A delightful treat that combines the sweetness of ripe bananas with rich chocolate chips, perfect for breakfast, snacks, or dessert.


Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1 cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp fine salt
  • 1 cup all-purpose flour
  • 1 cup mashed overripe banana (about 2 large bananas)
  • 3/4 cup chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper, greasing it with cooking spray.
  2. Cream together the unsalted butter and light brown sugar in a large mixing bowl until fluffy, about 2-3 minutes.
  3. Add the egg, vanilla extract, and fine salt, mixing until well combined.
  4. Gently fold in the all-purpose flour until just combined, then incorporate the mashed bananas and chocolate chips evenly.
  5. Pour the batter into the prepared baking dish and spread it evenly, adding extra chocolate chips on top if desired.
  6. Bake in the preheated oven for 33 to 37 minutes, rotating halfway through. The bars are done when the edges are golden brown and a toothpick inserted in the center comes out clean.
  7. Let the bars cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing into 16 squares.

Notes

For dietary adjustments, consider using coconut oil instead of butter, coconut sugar instead of brown sugar, or a gluten-free flour blend in place of all-purpose flour.
