- 1/2 cup unsalted butter, room temperature
- 1 cup packed light brown sugar
- 1 large egg, room temperature
- 1 1/2 tsp vanilla extract
- 1/2 tsp fine salt
- 1 cup all-purpose flour
- 1 cup mashed overripe banana (about 2 large bananas)
- 3/4 cup chocolate chips (semi-sweet or dark)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper, greasing it with cooking spray.
- Cream together the unsalted butter and light brown sugar in a large mixing bowl until fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and fine salt, mixing until well combined.
- Gently fold in the all-purpose flour until just combined, then incorporate the mashed bananas and chocolate chips evenly.
- Pour the batter into the prepared baking dish and spread it evenly, adding extra chocolate chips on top if desired.
- Bake in the preheated oven for 33 to 37 minutes, rotating halfway through. The bars are done when the edges are golden brown and a toothpick inserted in the center comes out clean.
- Let the bars cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing into 16 squares.
Notes
For dietary adjustments, consider using coconut oil instead of butter, coconut sugar instead of brown sugar, or a gluten-free flour blend in place of all-purpose flour.
