Description

A simple and tasty Chinese chicken fried rice recipe.


Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add mixed vegetables and cook for 2-3 minutes.
  3. Push vegetables to one side and pour in beaten eggs. Scramble until fully cooked.
  4. Add cooked rice and chicken to the skillet.
  5. Pour soy sauce over the mixture and stir well.
  6. Cook for another 3-5 minutes, stirring occasionally.
  7. Add green onions and season with salt and pepper. Mix well and serve hot.
