Description
A simple and tasty Chinese chicken fried rice recipe.
Ingredients

- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add mixed vegetables and cook for 2-3 minutes.
- Push vegetables to one side and pour in beaten eggs. Scramble until fully cooked.
- Add cooked rice and chicken to the skillet.
- Pour soy sauce over the mixture and stir well.
- Cook for another 3-5 minutes, stirring occasionally.
- Add green onions and season with salt and pepper. Mix well and serve hot.
Notes
- Use leftover rice for better texture.
- Adjust soy sauce according to taste.
- Add more vegetables if desired.
