- 1 lb Chicken breast (cut into bite-sized pieces)
- 6 cloves Garlic (minced)
- 1 inch piece Ginger (minced)
- 1/4 cup Soy sauce
- 2 tablespoons Honey
- 1 tablespoon Rice vinegar
- 1 tablespoon Sesame oil
- 1 tablespoon Cornstarch
- 2 tablespoons Vegetable oil (for cooking)
- 2 Green onions (chopped, for garnish)
- 1 Red bell pepper (chopped)
- 1 cup Broccoli florets
- 3 cups Cooked rice (for serving)
Instructions
- Cut the chicken into bite-sized pieces and mince the garlic and ginger.
- In a bowl, mix soy sauce, honey, rice vinegar, sesame oil, and cornstarch to create the sauce.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook for 5–7 minutes until browned and cooked through.
- Add garlic and ginger; stir for 1 minute until fragrant.
- Add red bell pepper and broccoli. Stir-fry for 3–5 minutes until vegetables are tender-crisp.
- Pour the sauce over the chicken and vegetables. Stir and cook for another minute until the sauce thickens.
- Serve hot over cooked rice and garnish with chopped green onions.
Notes
- Use chicken thighs instead of breasts for a juicier result.
- Tamari is a great gluten-free soy sauce alternative.
- Prepare and chop all ingredients before starting for smoother cooking.
- Add red pepper flakes or chili sauce for a spicy kick.
