A comforting dish combining tender steak, creamy cheeses, and fluffy rice, perfect for weeknights or gatherings.
Ingredients

- 1 cup long grain rice
- 2 cups chicken broth
- 1 cup Monterey Jack cheese
- 1 cup cheddar cheese
- 1/2 cup whole milk
- 1 tsp paprika
- 1 tsp chili powder
- 2 cloves fresh garlic, minced
- 2 tbsp olive oil
- 2 tbsp butter
- 1 flank or sirloin steak
- 1 tsp ground cumin
- 1 tsp garlic powder
- Salt, to taste
- Pepper, to taste
Instructions
- Rinse the rice under cold running water until clear, then set aside.
- In a saucepan, heat olive oil, add rinsed rice and garlic powder, sauté for 1-2 minutes.
- Add chicken broth, bring to a boil, then reduce heat, cover and simmer for 18 minutes.
- Dry the steak, season with spices and let it marinate.
- Preheat skillet and sear the steak for 4 minutes on each side, then let it rest for 10 minutes.
- Melt butter in the skillet, add garlic, then milk and simmer, scraping the pan.
- Stir in cheese until melted, add chili powder and cumin, then simmer until thickened.
- Slice the steak against the grain.
- Serve rice topped with steak and cheese sauce, and optional toppings.
Notes
Feel free to substitute rice or cheese varieties based on preference and availability.
