Description

A comforting dish combining tender steak, creamy cheeses, and fluffy rice, perfect for weeknights or gatherings.


Ingredients

  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 cup Monterey Jack cheese
  • 1 cup cheddar cheese
  • 1/2 cup whole milk
  • 1 tsp paprika
  • 1 tsp chili powder
  • 2 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 flank or sirloin steak
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Rinse the rice under cold running water until clear, then set aside.
  2. In a saucepan, heat olive oil, add rinsed rice and garlic powder, sauté for 1-2 minutes.
  3. Add chicken broth, bring to a boil, then reduce heat, cover and simmer for 18 minutes.
  4. Dry the steak, season with spices and let it marinate.
  5. Preheat skillet and sear the steak for 4 minutes on each side, then let it rest for 10 minutes.
  6. Melt butter in the skillet, add garlic, then milk and simmer, scraping the pan.
  7. Stir in cheese until melted, add chili powder and cumin, then simmer until thickened.
  8. Slice the steak against the grain.
  9. Serve rice topped with steak and cheese sauce, and optional toppings.

Notes

Feel free to substitute rice or cheese varieties based on preference and availability.
