- 2 cups mashed potatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup breadcrumbs
- 1/4 cup green onions (chopped)
- 1 large egg
- Salt and pepper to taste
- Oil for frying or cooking spray for baking
Instructions
- Boil the potatoes until fork-tender, about 15-20 minutes. Drain and mash until smooth; season with salt and pepper. Let cool slightly.
- In a large bowl, mix mashed potatoes, cheese, green onions, and egg until well combined.
- Form small balls from the mixture, about the size of a golf ball, and place them on a plate.
- Coat each ball in breadcrumbs. Fry in hot oil for 4-6 minutes until golden brown, or bake at 400°F (200°C) for 20 minutes until crispy.
Notes
For a gluten-free option, substitute breadcrumbs with crushed gluten-free crackers or almond flour. Experiment with different cheese types and seasonings for unique flavors.
