Description
Cheesy Cauliflower Gratin is a delightful dish that combines tender cauliflower florets with a rich, creamy cheese sauce, baked until golden and bubbly.
Ingredients
- Cauliflower: 1 large head, cut into florets
- Butter: 3 tablespoons
- All-purpose flour: 3 tablespoons
- Milk: 2 cups (whole or 2%)
- Heavy cream: 1 cup
- Cheddar cheese: 2 cups, shredded
- Parmesan cheese: 1/2 cup, grated
- Garlic: 2 cloves, minced
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
- Nutmeg: 1/4 teaspoon (optional)
- Fresh parsley or chives: for garnish (optional)
Instructions
- Prepare the cauliflower by boiling it in salted water for about 5 minutes until tender but still crisp, then drain.
- Make the cheese sauce by melting butter, sautéing garlic, adding flour to create a roux, and gradually whisking in milk and cream until thickened. Stir in cheeses and seasonings.
- Combine the cooked cauliflower with the cheese sauce in a mixing bowl, ensuring each floret is well coated.
- Pour the mixture into a baking dish, optionally topping with extra cheese, and bake at 375°F (190°C) for 25-30 minutes until golden brown and bubbling.
Notes
- Cheddar cheese can be sharp or mild based on preference.
- For a lighter version, reduce heavy cream and increase milk.
- Can be made ahead of time and stored in the refrigerator before baking.
- Frozen cauliflower can be used; thaw and drain before use.
