A quick and easy cheesy beef enchilada tortellini skillet recipe.
Ingredients

- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn
- 2 cups cheese tortellini
- 2 cups shredded cheese
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a skillet, cook ground beef over medium heat until browned.
- Add onion and garlic, cooking until softened.
- Stir in enchilada sauce, black beans, corn, and cumin.
- Add tortellini and bring to a boil.
- Reduce heat and simmer until tortellini is cooked.
- Top with cheese and cover until melted.
Notes
- Feel free to add your favorite vegetables.
- For extra spice, add jalapeños.
