Description

A quick and easy cheesy beef enchilada tortellini skillet recipe.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn
  • 2 cups cheese tortellini
  • 2 cups shredded cheese
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook ground beef over medium heat until browned.
  2. Add onion and garlic, cooking until softened.
  3. Stir in enchilada sauce, black beans, corn, and cumin.
  4. Add tortellini and bring to a boil.
  5. Reduce heat and simmer until tortellini is cooked.
  6. Top with cheese and cover until melted.

Notes

  • Feel free to add your favorite vegetables.
