Description

Ingredients

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • 8 small corn tortillas
  • 1 cup cabbage, shredded
  • 1 avocado, sliced
  • 1/2 cup cilantro, chopped
  • 1/2 cup Greek yogurt
  • Juice of 1 lime

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss cauliflower florets with olive oil, cumin, paprika, and salt.
  3. Spread cauliflower on a baking sheet and roast for 25-30 minutes until golden.
  4. While cauliflower roasts, mix Greek yogurt, lime juice, and cilantro in a bowl.
  5. Warm tortillas in a pan or microwave.
