- 1 head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- 8 small corn tortillas
- 1 cup cabbage, shredded
- 1 avocado, sliced
- 1/2 cup cilantro, chopped
- 1/2 cup Greek yogurt
- Juice of 1 lime
Instructions
- Preheat the oven to 425°F (220°C).
- Toss cauliflower florets with olive oil, cumin, paprika, and salt.
- Spread cauliflower on a baking sheet and roast for 25-30 minutes until golden.
- While cauliflower roasts, mix Greek yogurt, lime juice, and cilantro in a bowl.
- Warm tortillas in a pan or microwave.
- Assemble tacos by placing roasted cauliflower, shredded cabbage, and avocado on tortillas.
- Drizzle with cilantro lime crema.
Notes
- Adjust spice levels to your liking.
- Can substitute Greek yogurt with sour cream for a different flavor.
- Serve with lime wedges on the side.
