- 1 cup long-grain rice
- 2 cups chicken broth
- 1 green bell pepper, chopped

- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sausage and cook until browned.
- Stir in onion, bell pepper, and garlic; sauté until soft.
- Add rice and Cajun seasoning; stir for 2 minutes.
- Pour in chicken broth and add tomatoes; bring to a boil.
