- 1 fresh whole pineapple, peeled, cored, and cut into 8 spears
- 1/2 cup of light brown sugar
- 1 teaspoon of cayenne pepper
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of kosher salt
- Vegetable oil spray for grill
Instructions
- Preheat your grill to medium-high heat and lightly spray the grill grates with vegetable oil.
- In a small mixing bowl, combine brown sugar, cayenne pepper, vanilla extract, and kosher salt.
- Coat pineapple spears with the seasoning mixture evenly.
- Grill the pineapple for 2-3 minutes on each side until caramelized.
- Serve warm, optionally garnished with fresh mint leaves.
Notes
For a different flavor, try substituting honey for brown sugar or leaving out cayenne pepper for a milder dish.
