Description

A nutritious and hearty broccoli quinoa casserole.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups broccoli florets
  • 1 cup shredded cheese
  • 2 cups vegetable broth
  • 1 cup milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse quinoa under cold water.
  3. In a pot, heat olive oil and sauté onion and garlic until soft.
  4. Add quinoa, vegetable broth, salt, and pepper to the pot. Bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Stir in broccoli and cook for an additional 5 minutes.
  7. Remove from heat and mix in milk and half of the cheese.
  8. Transfer the mixture to a baking dish and top with remaining cheese.
  9. Bake for 25-30 minutes until the cheese is bubbly and golden.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • You can add other vegetables like carrots or bell peppers.
  • For a vegan option, use plant-based cheese and milk.
