A delicious and easy breakfast casserole with layers of quesadilla flavors.
Ingredients

- 8 tortillas
- 6 eggs
- 1 cup milk
- 2 cups shredded cheese
- 1 cup cooked and crumbled sausage
- 1 cup diced bell peppers
- 1/2 cup chopped onions
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together eggs and milk.
- Add cheese, sausage, bell peppers, onions, cumin, chili powder, salt, and pepper to the egg mixture.
- Grease a baking dish and layer tortillas on the bottom.
- Pour the egg mixture over the tortillas.
- Add another layer of tortillas on top.
- Bake for 30-35 minutes or until set.
- Let it cool for a few minutes before slicing.
Notes
- Feel free to customize ingredients based on your preference.
- Can be stored in the refrigerator for up to 3 days.
- Reheat in the oven or microwave before serving.
