Ingredients

- 1 lb ground sausage
- 1 cup diced bell peppers
- 1 cup diced onion
- 8 large eggs
- 2 cups shredded cheese
- 1 cup milk
- 1 can black beans, drained
- 1 package flour tortillas
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the sausage in a skillet until browned.
- Add bell peppers and onions; cook until softened.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Layer tortillas in a baking dish.
- Add sausage mixture and black beans on top of tortillas.
- Pour egg mixture over the top.
- Sprinkle cheese evenly over the casserole.
- Bake for 30-35 minutes or until set.
Notes
- Can substitute turkey sausage for a leaner option.
- Make it vegetarian by omitting sausage and adding more vegetables.
- Leftovers can be stored in the fridge for 3-4 days.
