Ingredients

  • 1 lb ground sausage
  • 1 cup diced bell peppers
  • 1 cup diced onion
  • 8 large eggs
  • 2 cups shredded cheese
  • 1 cup milk
  • 1 can black beans, drained
  • 1 package flour tortillas
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the sausage in a skillet until browned.
  3. Add bell peppers and onions; cook until softened.
  4. In a bowl, whisk together eggs, milk, salt, and pepper.
  5. Layer tortillas in a baking dish.
  6. Add sausage mixture and black beans on top of tortillas.
  7. Pour egg mixture over the top.
  8. Sprinkle cheese evenly over the casserole.
  9. Bake for 30-35 minutes or until set.
