- 1 cup pistachios, shelled and unsalted
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 cups fresh blackberries (or frozen, thawed)
- 1/4 cup honey or maple syrup
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/4 teaspoon vanilla extract
- Additional chopped pistachios for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch (20×20 cm) baking dish with parchment paper.
- In a food processor, combine the shelled pistachios, flour, sugar, and salt. Pulse until it resembles coarse crumbs. Add the melted butter and pulse until combined and crumbly.
- In a medium saucepan over medium heat, combine the blackberries, honey (or maple syrup), lemon juice, cornstarch, and vanilla extract. Cook for 5-7 minutes until the mixture thickens.
- Chop additional pistachios for topping (optional).
- Pour the blackberry filling over the cooled pistachio crust and spread evenly.
- Bake for an additional 20-25 minutes until the filling is bubbly and set.
- Let the bars cool completely in the baking dish, then lift out using the parchment overhang and cut into squares.
Notes
- Fresh blackberries are preferred, but frozen can be used if thawed and drained.
- Store leftovers in an airtight container in the refrigerator for up to a week.
- These bars can be frozen for up to three months.
