Description

Ingredients

  • 1 cup pistachios, shelled and unsalted
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 cups fresh blackberries (or frozen, thawed)
  • 1/4 cup honey or maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 teaspoon vanilla extract
  • Additional chopped pistachios for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch (20×20 cm) baking dish with parchment paper.
  2. In a food processor, combine the shelled pistachios, flour, sugar, and salt. Pulse until it resembles coarse crumbs. Add the melted butter and pulse until combined and crumbly.
  3. In a medium saucepan over medium heat, combine the blackberries, honey (or maple syrup), lemon juice, cornstarch, and vanilla extract. Cook for 5-7 minutes until the mixture thickens.
  4. Chop additional pistachios for topping (optional).
  5. Pour the blackberry filling over the cooled pistachio crust and spread evenly.
  6. Bake for an additional 20-25 minutes until the filling is bubbly and set.
  7. Let the bars cool completely in the baking dish, then lift out using the parchment overhang and cut into squares.

Notes

  • Fresh blackberries are preferred, but frozen can be used if thawed and drained.
  • Store leftovers in an airtight container in the refrigerator for up to a week.
  • These bars can be frozen for up to three months.
