Delicious cheese enchiladas made with fresh ingredients.
Ingredients

- 10 corn tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 2 cups enchilada sauce
- 1 cup chopped onions
- 1/2 cup sour cream
- 1 tablespoon vegetable oil
Instructions
- Preheat oven to 350°F (175°C).
- Heat the oil in a skillet over medium heat.
- Sauté the onions until translucent.
- Soften the tortillas in the skillet for a few seconds.
- Fill each tortilla with cheese and a spoonful of onions.
- Roll the tortillas and place them seam side down in a baking dish.
- Pour enchilada sauce over the rolled tortillas.
- Sprinkle remaining cheese on top.
- Bake for 20 minutes.
- Serve hot with sour cream.
Notes
- Use your favorite cheese blend for different flavors.
- For extra heat, add jalapeños to the filling.
- Can substitute corn tortillas with flour tortillas.
