Description
Banana Pudding Poke Cake is a delightful dessert that combines the classic flavors of banana pudding with a moist, fluffy cake. This recipe is perfect for anyone who loves the sweet, creamy taste of bananas and the crunch of vanilla wafers.
Ingredients
Scale
- 1 box vanilla cake mix (approximately 15.25 oz)
- 3 ripe bananas, mashed
- 1 can (14 oz) sweetened condensed milk
- 1 box (3.4 oz) instant vanilla pudding mix
- 1 cup whole milk
- 1 container (8 oz) whipped topping (like Cool Whip)
- 1 cup vanilla wafers, crushed
- Additional banana slices for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking dish.
- In a large mixing bowl, combine the vanilla cake mix, mashed bananas, and other ingredients from the cake mix box. Mix until smooth.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes. Check for doneness with a toothpick.
- Let the cake cool in the pan for about 10 minutes, then poke holes all over the top with a wooden spoon handle or skewer.
- In a separate bowl, whisk together the sweetened condensed milk, instant vanilla pudding mix, and whole milk until smooth and thickened.
- Pour the pudding mixture over the poked cake, ensuring it seeps into the holes. Cover with plastic wrap and refrigerate for at least 2 hours.
- After chilling, spread the whipped topping over the cake and sprinkle with crushed vanilla wafers. Optionally, add banana slices on top.
Notes
- Use ripe bananas with brown spots for the best flavor.
- Let the pudding mixture sit for a few minutes to thicken before pouring it over the cake.
- Store leftovers in the refrigerator for up to a week.
