Description

Banana Pudding Poke Cake is a delightful dessert that combines the classic flavors of banana pudding with a moist, fluffy cake. This recipe is perfect for anyone who loves the sweet, creamy taste of bananas and the crunch of vanilla wafers.

Ingredients

Scale
  • 1 box vanilla cake mix (approximately 15.25 oz)
  • 3 ripe bananas, mashed
  • 1 can (14 oz) sweetened condensed milk
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 cup whole milk
  • 1 container (8 oz) whipped topping (like Cool Whip)
  • 1 cup vanilla wafers, crushed
  • Additional banana slices for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the vanilla cake mix, mashed bananas, and other ingredients from the cake mix box. Mix until smooth.
  3. Pour the batter into the prepared baking dish and bake for 25-30 minutes. Check for doneness with a toothpick.
  4. Let the cake cool in the pan for about 10 minutes, then poke holes all over the top with a wooden spoon handle or skewer.
  5. In a separate bowl, whisk together the sweetened condensed milk, instant vanilla pudding mix, and whole milk until smooth and thickened.
  6. Pour the pudding mixture over the poked cake, ensuring it seeps into the holes. Cover with plastic wrap and refrigerate for at least 2 hours.
  7. After chilling, spread the whipped topping over the cake and sprinkle with crushed vanilla wafers. Optionally, add banana slices on top.

Notes

  • Use ripe bananas with brown spots for the best flavor.
  • Let the pudding mixture sit for a few minutes to thicken before pouring it over the cake.
  • Store leftovers in the refrigerator for up to a week.
