- 1 1/2 cups old-fashioned rolled oats
- 2/3 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2/3 cup milk
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mashed ripe banana
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 375°F and line a 12-cup muffin pan with paper liners.
- In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk the milk, vegetable oil, eggs, and vanilla extract until well combined, then stir in the mashed bananas.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Fold in chocolate chips if using.
- Divide the batter among the muffin liners and sprinkle with additional oats and cinnamon if desired. Bake for 18 to 22 minutes until golden brown.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Use ripe bananas for the best flavor and moisture. Experiment with different mix-ins like nuts or dried fruits.
