Description

Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 2/3 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe banana
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 375°F and line a 12-cup muffin pan with paper liners.
  2. In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk the milk, vegetable oil, eggs, and vanilla extract until well combined, then stir in the mashed bananas.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Fold in chocolate chips if using.
  5. Divide the batter among the muffin liners and sprinkle with additional oats and cinnamon if desired. Bake for 18 to 22 minutes until golden brown.
  6. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Use ripe bananas for the best flavor and moisture. Experiment with different mix-ins like nuts or dried fruits.
