  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg, mashed bananas, and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, baking powder, and salt.
  4. Gradually add the dry mixture to the banana mixture, stirring gently until just combined.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
  6. Bake for 10-12 minutes until the edges are golden brown and the centers are set but slightly soft.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
