Ingredients
Scale
- 1 cup ripe bananas (about 2 medium bananas, mashed)
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg, mashed bananas, and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, baking powder, and salt.
- Gradually add the dry mixture to the banana mixture, stirring gently until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
- Bake for 10-12 minutes until the edges are golden brown and the centers are set but slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Use very ripe bananas for the best flavor and sweetness.
- Adjust sweetness by adding more sugar if desired.
- For chewier cookies, slightly underbake them.
- Experiment with mix-ins like nuts, seeds, or different types of chocolate.
