Description

A delightful twist on classic brownies, these banana brownies combine rich cocoa flavor and ripe bananas, topped with creamy vanilla frosting.


Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup ripe bananas, mashed (about 2 medium bananas)
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • For the Vanilla Frosting:
  • 1/2 cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 24 tbsp milk

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 9×13 inch baking pan by greasing or lining it with parchment paper.
  2. In a large mixing bowl, combine the granulated sugar, sour cream, softened butter, and eggs. Blend until smooth and creamy, about 2-3 minutes.
  3. Add the mashed bananas and vanilla extract to the wet mixture, mixing until well incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt, then gradually combine with the wet ingredients on low speed.
  5. Fold in the chopped walnuts into the brownie batter gently.
  6. Pour the batter into the prepared pan and bake for 25 to 30 minutes. Check doneness with a toothpick.
  7. While the brownies cool, prepare the frosting by melting the unsalted butter and whisking in the powdered sugar and vanilla extract, adding milk until you reach the desired consistency.
  8. Once cool, frost the brownies and allow to set before slicing.

Notes

For a richer flavor, consider browning the butter used in the frosting. Store in an airtight container for up to 5 days or freeze for up to 3 months.
