A delightful twist on classic brownies, these banana brownies combine rich cocoa flavor and ripe bananas, topped with creamy vanilla frosting.

- 1 1/2 cups granulated sugar
- 1/2 cup sour cream
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup ripe bananas, mashed (about 2 medium bananas)
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts
- For the Vanilla Frosting:
- 1/2 cup unsalted butter, melted
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2–4 tbsp milk
Instructions
- Preheat your oven to 375°F (190°C) and prepare a 9×13 inch baking pan by greasing or lining it with parchment paper.
- In a large mixing bowl, combine the granulated sugar, sour cream, softened butter, and eggs. Blend until smooth and creamy, about 2-3 minutes.
- Add the mashed bananas and vanilla extract to the wet mixture, mixing until well incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt, then gradually combine with the wet ingredients on low speed.
- Fold in the chopped walnuts into the brownie batter gently.
- Pour the batter into the prepared pan and bake for 25 to 30 minutes. Check doneness with a toothpick.
- While the brownies cool, prepare the frosting by melting the unsalted butter and whisking in the powdered sugar and vanilla extract, adding milk until you reach the desired consistency.
- Once cool, frost the brownies and allow to set before slicing.
Notes
For a richer flavor, consider browning the butter used in the frosting. Store in an airtight container for up to 5 days or freeze for up to 3 months.
