Description
A delightful dish combining juicy chicken, sweet balsamic vinegar, and fresh vegetables for an impressive meal.
Ingredients
Scale
- 1/3 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons avocado oil, divided
- 2 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1 tablespoon Dijon mustard
- 8 ounces grape tomatoes, halved
- 8 ounces fresh mozzarella balls
- 2 tablespoons finely chopped fresh basil
- 2 pounds boneless skinless chicken breasts, pounded to even thickness
- Kosher salt
- Fresh black pepper
Instructions
- Whisk together balsamic vinegar, honey, minced garlic, Italian seasoning, and Dijon mustard in a medium bowl. Season with salt and pepper and set aside.
- In a separate bowl, combine halved grape tomatoes, fresh mozzarella balls, and chopped basil. Season with salt and pepper and set aside.
- Preheat oven to 400°F (200°C). Heat 1 tablespoon of avocado oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper, cook each side until golden brown, about 1-2 minutes per side.
- Pour the prepared balsamic sauce into the skillet, let it come to a simmer, and then distribute the tomato and mozzarella mixture over the chicken.
- Bake in the preheated oven for 18-23 minutes until the chicken reaches an internal temperature of 165°F (75°C). Let it rest for 5 minutes before serving.
Notes
For even better flavor, consider marinating the chicken in the balsamic sauce for at least 30 minutes before cooking.
