- 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
- 1/2 cup balsamic vinegar (120 ml)
- 2 tablespoons honey (30 g)
- 4 cloves garlic, minced
- 2 tablespoons olive oil (30 ml)
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 teaspoon salt (to taste)
- 1/2 teaspoon black pepper (to taste)
Instructions
- Marinate the chicken by whisking together balsamic vinegar, honey, minced garlic, olive oil, chopped rosemary, salt, and black pepper in a bowl.
- Place chicken in a resealable bag or dish, pour marinade over, seal, and refrigerate for at least 30 minutes (up to 2 hours).
- Preheat oven to 400°F (200°C). Remove chicken from marinade and place in a baking dish, pouring remaining marinade over the top.
- Bake chicken for 25-30 minutes until it reaches an internal temperature of 165°F (75°C).
- Prepare sauce by simmering pan juices in a saucepan over medium heat.
- Slice chicken after resting for 5 minutes, drizzle sauce over, and serve.
Notes
- For a crispy finish, broil the chicken for a few minutes after baking.
- Consider adding vegetables like bell peppers or zucchini to the baking dish for a complete meal.
- Alternative marinades can be made using citrus juices or soy sauce.
