Description
Baked falafel is a healthy and delicious alternative to traditional fried falafel, made from chickpeas and fresh herbs, served with a creamy tahini sauce.
Ingredients

- 400g (14 oz) canned chickpeas, drained and rinsed
- 1 small onion, roughly chopped
- 2–3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (plus more for brushing)
- 1 tablespoon lemon juice
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1–2 tablespoons water (to thin)
- 1 clove garlic, minced
- Salt to taste
- Fresh vegetables (such as cucumber, tomato, and lettuce)
- Paprika for garnish
Instructions
- Prepare the chickpeas by draining and rinsing canned chickpeas or soaking and cooking dried chickpeas until tender.
- In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, black pepper, olive oil, and lemon juice. Pulse until well combined but slightly chunky.
- Shape the mixture into balls or patties, about 1-1.5 inches in diameter, and place them on a baking sheet.
- Preheat the oven to 200°C (400°F) and brush the tops of the falafel with olive oil. Bake for 20-25 minutes, flipping halfway through.
- While baking, prepare the tahini sauce by whisking together tahini, lemon juice, minced garlic, and salt. Gradually add water until desired consistency is reached.

- Consider using dried chickpeas for enhanced taste and texture.
- Experiment with different herbs and spices for variety.
- Store leftovers in an airtight container in the refrigerator for up to three days.
