- 6 slices of bacon
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 4 large eggs
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook bacon until crispy. Remove and crumble.
- Sauté onion in the bacon grease until soft.
- Add diced potatoes and cook until tender.
- In a baking dish, combine potatoes, bacon, and onion.
- Whisk eggs and pour over the mixture.
- Top with cheese and season with salt and pepper.
- Bake for 25-30 minutes until eggs are set.
